01 - Combine cottage cheese and Greek yogurt in a blender or food processor. Blend until the mixture is completely smooth and creamy.
02 - In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt. Stir in optional chopped herbs or garlic powder if using.
03 - Pour the blended cottage cheese mixture into the bowl with the dry ingredients. Use a spatula to stir until a sticky dough forms.
04 - Transfer dough to a lightly floured surface. Divide into 4 equal portions. Roll each piece into a ball and flatten into a circle approximately 1/4 inch thick using a rolling pin.
05 - Preheat a non-stick skillet or griddle over medium heat. Cook each flatbread for 2 to 3 minutes on each side, until golden brown spots appear and bread is cooked through.
06 - Transfer cooked flatbreads to a plate and cover with a clean kitchen towel to keep warm and soft. Serve immediately as a wrap or with desired fillings.
