01 - 1.5 lbs boneless, skinless chicken thighs, cut into large chunks

# How To Make It:

01 - Heat olive oil in a skillet over medium heat. Add onion, carrots, celery, and bell pepper; sauté for 4-5 minutes until softened. Stir in garlic and tomato paste; cook for 1 minute until fragrant.
02 - Transfer the sautéed vegetables to the slow cooker. Add chicken thighs, diced tomatoes with juice, chicken broth, rosemary, thyme, oregano, salt, black pepper, and red pepper flakes. Stir thoroughly to combine all ingredients.
03 - Cover and cook on LOW for 6 hours or HIGH for 3 hours, until the chicken is tender, fully cooked, and flavors have melded together.
04 - Stir in cannellini beans and fresh spinach. Cover and cook for an additional 10-15 minutes, until the spinach is wilted and beans are heated through.
05 - Taste the stew and adjust seasoning with additional salt and pepper if needed. Serve hot in bowls, garnished generously with chopped fresh parsley and an optional sprinkle of grated Parmesan cheese.
