01 - In a small bowl, thoroughly combine mayonnaise, ketchup, yellow mustard, chopped pickles, white vinegar, and garlic powder. Set aside.
02 - Mix ground beef with salt and black pepper. Shape into 8 equal balls, about 2 ounces each.
03 - Preheat a large nonstick skillet or griddle over medium-high heat until hot.
04 - Lay a flour tortilla on the work surface. Place one beef ball in the center and flatten evenly to cover most of the tortilla, forming a patty about 1/4 inch thick.
05 - Place assembled tortilla, beef side down, onto the hot skillet. Press further with a spatula if required. Sear for 2 to 3 minutes until beef is browned and edges are crisp.
06 - Flip the tortilla so the beef faces upward. Immediately top with one slice of cheddar cheese, cover, and cook for 1 minute until the cheese melts and the tortilla is golden and crisp.
07 - Transfer assembled tacos to a plate and repeat the process with the remaining tortillas and beef balls.
08 - Spread a spoonful of prepared sauce over the melted cheese. Layer with shredded lettuce, diced tomato, sliced red onion, and pickle slices.
09 - Fold and serve the tacos immediately, while hot and crisp.
