- Preheat oven to 425°F. Line a pizza pan or baking sheet with parchment paper.
- Boil sweet potato cubes in a medium saucepan until fork-tender, about 10 minutes. Drain and let cool slightly.
- Mash the sweet potatoes with a potato masher until completely smooth. Allow to cool to room temperature.
- In a mixing bowl, combine the mashed sweet potatoes, egg, flour, Parmesan cheese, salt, garlic powder, and black pepper. Stir until thoroughly incorporated.
- Press the mixture onto the prepared pan into a 12-inch round or oval shape, approximately 1/2 inch thick.
- Bake the crust for 15 to 18 minutes, until set and just beginning to turn golden on the edges.
- Remove from oven. Spread pizza sauce evenly over the crust, then layer with mozzarella cheese, pepperoni slices, and red onion. Sprinkle dried oregano over the top.
- Return to the oven and bake another 10 to 12 minutes, until the cheese is fully melted and bubbly.
- While the pizza bakes, gently heat the honey and chili flakes in a small saucepan over low heat for 2 to 3 minutes. Do not let it boil. Remove from heat and let steep.
- Remove pizza from oven and let rest for 3 to 5 minutes. Drizzle the hot honey over the top just before slicing and serving.
