01 - Remove the tofu from its packaging, drain thoroughly, and wrap it in a clean kitchen towel. Place a heavy object on top and press for at least 10 minutes to extract excess moisture.
02 - Once pressed, cut the tofu into uniform 3/4-inch cubes.
03 - In a mixing bowl, gently toss the tofu cubes with cornstarch, olive oil, salt, pepper, and garlic powder until each piece is evenly coated.
04 - Preheat your air fryer to 400°F (200°C) for 3 minutes.
05 - Arrange the seasoned tofu cubes in a single layer within the air fryer basket. Cook for 12 to 15 minutes, shaking or turning them halfway through, until they become golden and crispy.
06 - While the tofu is cooking, prepare the peanut sauce. In a small bowl, whisk together the peanut butter, soy sauce, maple syrup, rice vinegar, grated ginger, and minced garlic. Gradually add 2 to 3 tablespoons of warm water, whisking continuously, until the sauce achieves a smooth, pourable consistency.
07 - Once the tofu is crispy, transfer it to a serving plate. Drizzle generously with peanut sauce, or serve the sauce on the side for dipping.
08 - Optionally, garnish the dish with chopped peanuts, sliced scallions, fresh cilantro, and sesame seeds. Serve immediately for best results.
