01 - 16 large Medjool dates, pitted
02 - 2 oz goat cheese (or cream cheese), softened

03 - 8 strips beef bacon, halved crosswise

01 - Slice each date lengthwise to create a pocket, removing pits if necessary.
02 - Fill each date with approximately 1 teaspoon of softened goat cheese.
03 - Encase each stuffed date with half a slice of beef bacon; secure with toothpicks if needed.
04 - Heat the air fryer to 400°F (200°C) for 3 minutes.
05 - Place the wrapped dates in a single layer inside the air fryer basket without overlapping.
06 - Cook for 8 to 10 minutes, shaking the basket halfway through, until bacon is crispy and browned.
07 - Remove dates and allow to cool slightly. Drizzle with honey and sprinkle parsley if desired.
